The Winter's Table: Tablescaping with Hortus Poeticus

A day spent gathering, making and eating at Hortus.

Join us for an immersive winter workshop inspired by the landscape of the South Downs. Together, we’ll spend the morning outdoors, foraging for seasonal foliage, branches, berries, seedheads and other natural treasures to bring back to the barn and transform into a beautiful table setting.

We’ll begin with a walk through the farm, learning how to look at the season through a florist’s eye - noticing the shapes, textures, colours and unexpected details that can become part of a table. You’ll gather your own collection of materials, taking inspiration from what is growing around us.

Back in the Studio we’ll work with your gathered stems to create your own section of the Hortus Christmas table. Guided by our florists, you’ll learn how to compose with natural materials, creating something abundant, atmospheric and wonderfully seasonal.

Then we’ll sit down together around the table we have created.

A cooked lunch will be served amongst the foliage, with a fire and mulled wine to keep us warm.

The day includes:

A guided winter forage around the Hortus landscape

All materials and floristry equipment

Hands-on instruction and guidance from our florists

Your own section of the festive table to create and take home

A cooked seasonal lunch served around the table

Mulled wine and festive treats around the fire

A full day immersed in the winter landscape at Hortus

No previous floristry experience is needed - just warm clothes, comfortable shoes and an appetite for an afternoon of gentle creativity.
